My opponent moves with Stellacorn and I respond to that move trigger with Star Crossed or Gust. Do they still draw a card from Stellacorn's ability?

Yes. Responding to the move trigger with Star Crossed or Gust does not stop Stellacorn's draw when its ability resolves.
