Does Void Assault still move the remaining unit if one target becomes invalid?

Yes. Spells in Riftbound always follow "Do as much as you can" when resolving. There is no fizzling — even if every part of a spell becomes impossible, the spell still resolves. The only way to stop a spell entirely is to counter it.
