In a 1v1 game, when Cull the Weak says each other player chooses a unit, do I pick one of my opponent's units and they pick one of mine?

No. "Each other player" means everybody but the caster chooses one of their own units to be killed. Your opponent chooses one of their own units; you do not choose anything.
